With Memorial Day right around the corner I wanted to share with you a yummy recipe that is always a hit!! Fruit Pizza ~ with a patriotic flare!! 🙂 I love fruit pizza because its sweet yet light.. Not too crazy sweet like some cakes. Its perfect for the warmer months, topped with yummy fresh fruit!!
Here is what you’ll need:
-Cookie bottom-
1 Cup of Butter (can substitute coconut butter) 1 Cup of Sugar 2 Egg yolks (If you are one of my allergy readers… Egg replacer works great in this recipe, that’s what I use, but I am just giving the original recipe) 2 teaspoons of Vanilla 2-3 Tablespoons of Milk (again allergy readers.. Almond milk is fine to replace here) 3 Cups Flour 1 teaspoon of Baking powder 1/4 teaspoon of salt
ToppinG:
1 (8 oz.) package cream cheese 1 (8 oz. ) container Cool Whip 1 tsp. vanilla 1/2 cup powdered sugar *You can just use canned white frosting if you have a milk allergy (Duncan Hines is milk free)
Fruit:
Blueberries Raspberries *You can use any fruit, but to achieve the look above I used blueberries and raspberries
Directions:
Stir flour, baking powder & salt together. In separate bowl cream the butter, sugar, egg yolks & vanilla together Gradually add flour mix to the egg mixture Add Milk, 1 Tablespoon at a time, until the mixture is to a dough consistency (not too dry, not too wet) Work the dough into a ball with your hands (I usually separate into a couple of balls instead of one big one, its just easier to work with.) I also refrigerate the dough for a few hours, it just makes it easier to work with, but this is not mandatory) Roll out the dough and use a large bowl to trace a large circle and cut around the bowl to make the base of your pizza. Now remember that sugar cookies do not expand much, so use the size you want your actual pizza to be. If you don’t feel like rolling the dough out and cutting a circle, your can use a round pan and roll your dough inside the pan, covering almost the whole pan with dough (leaving an inch or so on the sides of the circle to allow some growth of the cookie) In the above picture I also made star cut outs because I knew there were going to be a lot of little kids at the party we were at and it made it easier to just grab them and go. Bake at 400 degrees for about 10 mins… Now the time may vary depending on the size of your “pizza” so just keep an eye on it and take it out when the edges are a light golden color. If you end up doing cut outs like above they only need to bake for about 7 minutes. For the topping: In a large bowl, blend ingredients with a mixer until nice and smooth. Spread the topping on like frosting a cake and then add fruit!! ENJOY!!!! X♥O Nicole
